Tortillas

Our tortillas are made using the traditional nixtamalization process — no processed flours, no preservatives, no shortcuts. We use whole native Mexican corn, limestone, and water, just like our ancestors did. The result is a tortilla that’s more flavorful, more nutritious, and structurally superior to anything you’ll find on supermarket shelves.

Just three ingredients: native corn, water, and food-grade limestone (calcium hydroxide). That’s it.

We use non-GMO, pesticide-free native corn sourced from smallholder farmers in different regions of Mexico including Oaxaca, Tlaxcala, Estado de México and Chiapas. Each varietal has its own flavor, color, and texture.

Keep them refrigerated in their vacuum-sealed bag. Once opened, store in an airtight container or ziplock bag for up to a week. For longer storage, they freeze beautifully — just thaw in the fridge or on the counter before reheating.

The best way is on a hot comal, cast-iron pan, or skillet for about 20–30 seconds per side. No oil needed. You can also steam them briefly for extra softness.

Mole

Mole is a traditional Mexican sauce (and sometimes the dish itself) that has deep cultural and ceremonial roots. It’s known for its rich, complex flavor developed through the slow cooking of chilies, nuts, seeds, spices, fruits, and sometimes chocolate. There are many regional varieties of mole across Mexico — some red, black, yellow, green, or even pink — each with its own ingredients, techniques, and stories.

At Xinachtli, we focus on a plant-based mole inspired by the traditions of Oaxaca, where mole is more than just food — it’s a sacred dish often prepared for ceremonies, offerings, and gatherings. Our version honors this heritage by using natural, carefully selected ingredients and traditional methods.

We make a plant-based, vegan, and gluten-free mole inspired by the traditions of the central valleys of Oaxaca. It’s a rich, complex sauce made from toasted chiles, fruits, nuts, seeds, masa, and spices — slowly cooked to develop deep layers of flavor.

Each batch is made from carefully selected natural ingredients like:

  • Ancho chilies

  • Plantain

  • Toasted almonds

  • Raisins

  • Nixtamal Masa

  • Onion and garlic

  • Xinachtli’s Mexican chocolate

  • A blend of warm spices

We do not use animal products, wheat, or artificial preservatives — just whole, real food rooted in tradition.

Simply heat and pour over your favorite dish. It pairs beautifully with vegetables, roasted meats, tofu, rice, tamales, or tacos. You can also simmer it gently with a bit of broth for a thinner consistency, depending on how you want to serve it.

It has mild to medium heat, depending on the batch, but is always balanced by sweet, nutty, and earthy flavors. 

SanarTeSana teas

SanarTEsana is a collection of agroecological medicinal teas created with care and intention in central Mexico. Each blend is crafted with hand-selected medicinal plants and designed to support physical, emotional, and spiritual well-being.

These teas are more than just herbal blends — they’re rooted in ancestral knowledge, plant-based healing, and food sovereignty. The plants are grown agroecologically (without chemicals), harvested respectfully, and blended with deep intention.

Each tea has a specific purpose, reflected in its playful and reflective Spanish name. Some examples include:

  • Activate – to energize and awaken

  • Relájate – to unwind and calm

  • Escúchate – to tune into yourself

  • Apapáchate – to nourish and nurture

  • Empodérate – to strengthen and uplift

  • Conéctate – to align and ground

  • Siéntete – to embrace presence and emotion

The teas are grown using agroecological practices, which go beyond organic certification. They’re cultivated without synthetic fertilizers or pesticides, in harmony with the land and traditional methods.

We currently ship select products within Canada. Tortillas are available for local delivery or pickup in Vancouver, while shelf-stable products like teas, hazelnut spreads and mole are available for national shipping.

Yes! Pickups are available Monday to Friday in East Vancouver (2408 Grant St) or Saturdays at the UBC Farm Market (during market season). Check the confirmation email for pickup instructions.

About Xinachtli

Xinachtli (pronounced “shee-nach-tlee”) is a Nahuatl word for “seed.” It symbolizes growth, potential, and transformation — values at the heart of everything we do.

Xinachtli was founded by Luis Almazán, a former visual effects artist turned food maker, seed steward, and cultural cook. Today, we’re a small team, dedicated to preserving and sharing the flavors, stories, and ancestral techniques behind native corn, cacao, and traditional foods. We’re currently growing and are always looking for like-hearted people to join our journey.
